These popsicles came about because my sister bought me more pumpkin spice creamer when I was actually kind of glad to be finishing the bottle. I love it, but was ready for plain cream for a bit. Anyway, I thought of these simple popsicles to use up a bit of that creamer, and use those Halloween molds one more time.
- 1 cheesecake flavored instant pudding package
- 1 1/2 cups of milk (I used almond)
- 1/2 cup of pumpkin spice creamer
- dusting of cinnamon
- silicone mold
- plastic wrap
Pour the instant pudding into a medium sized bowl, then add all liquid ingredients and whisk well. Add a pinch of cinnamon, mix, and then let sit for about 5 minutes. Since I used almond my mix was still fairly liquid. Pour into mold of choice. I placed my mold onto a cookie sheet, and it really helped when moving it to the freezer. Cover loosely with some plastic wrap and leave until frozen. Remove slowly from mold and enjoy! The taste of these really reminded me of horchata more than pumpkin, but were still yummy!
