I make my husband a dirt cake every Halloween, as he looooves Oreos, so I thought I’d do one for Easter as well, with a spring-time twist. I also remember as a child, that someone would always bring a cake topped with coconut “grass” to the family Easter celebration. I used vanilla Oreos rather than chocolate, and dyed some Rice Krispies for the grass instead of coconut, which can be love it or hate it flavor. I hadn’t eaten a Peep since I was a kid, and one bite in I remembered why.
For the pudding:
- 2 packages of vanilla pudding mix (and ingredients to make it )or if you want to make your own https://www.dessertnowdinnerlater.com/marshmallow-fluff-pudding-chocolate-swirl/ minus the chocolate swirl, of course. Honestly, in the end I don’t think there was much difference in taste between marshmallow and just plain vanilla pudding.
- 1 package of golden Oreos
- 1 8 ox block of cream cheese, softened
- 1 8 oz package of Cool Whip
- 1 stick of butter, softened
- 1/2 cup of powdered sugar
For the topping
- 3 cups Rice krispies
- 12 oz package marshmallows
- 3 tbs butter
- green food dye
- Peeps, malted milk eggs etc-whatever you want to decorate with
Prepare the pudding as directed. In a separate bowl, cream the cheese and butter together with a mixer, and then add the powdered sugar. Mix until creamy but firm. Fold the pudding and cream cheese mixture together.
Pulse the Oreos in a food producer. In a casserole dish (I used one of the smallest I own) place about a third of the pudding in the dish, and then sprinkle some of the Oreos. Add another layer of pudding, then Oreos until you have none left. Put that in the fridge while you make the Rice Krispies.
I made a half portion of the recipe off the box. Melt the butter and marshmallows as directed. Add the green food coloring once the marshmallows are melted. Fold in the cereal, and then set into a butter jelly roll pan to create a thin treat. Once it is set, you can decorate. I cut out two triangles to create a “path”, but you could certainly just cut a big rectangle and place it on top. Decorate as you wish.
